Graham Cracker Eclairs

This recipe is a crowd pleaser. Travels wells to events. Deliciously light and delicate. 

Course Dessert From the kitchen of Janay Barrow


  • 1 box whole graham crackers (about 3-4 packs)
  • 3 Cups half and half
  • 2 small boxes french vanilla instant pudding
  • 8 oz tub of cool whip
  • 1 tub chocolate frosting


  1. Mix pudding with half and half until firm. Stir in cool whip. (have a taste test or two)

  2. in 9x13 layer graham crackers (whole to cover bottom) them half custard, graham crackers, other half of custard, another layer of graham crackers then frosting.
  3. Refrigerate over night. it gets better the longer its in the fridge
