Pico de Gallo

Fresh is best when it comes to pico de gallo. This recipe adds a bit of that fresh taste to the Pulled Pork Nachos that blends to beautifully.

Ingredients

  • 3 tomatoes, diced (about 3/4 pound)
  • 1/4 cup diced white onion
  • 1/2 jalapeno pepper, minced
  • 1 handful of fresh cilantro, finely chopped
  • juice of 1 lime

Instructions

  1. Mix all the ingredients together in a bowl. Let chill before serving Store in an airtight container in the fridge and use within 1 week.
