This is my original strawberry pie recipe, that came from a booklet from the Home Economics Department from PGE. Circa 1974
Remove stems and wash strawberries. Drain thoroughly on paper towels.
Place berries in previously prepared pie shell, arranging carefully, placing the biggest berries on top.
Combine gelatin, water, cornstarch and sugar in saucepan. Cook, stirring, until clear. Add several drops of food coloring to make a rich red mixture. Cool 15 minutes.
Pour over berries, making sure to cover all berries. Refrigerate entire pie
Serve with whipped cream. Makes 6 servings.
I now use Linell's Pie Crust recipe, and always make two pies. Aunt Linell’s Pie Crust
Covering the strawberries with the gel is very important. Sometimes takes a bit of work.
I had one particular boyfriend that loved these pies, and I would spoil him frequently with them when I could.
